Healthy Carrot, Parsley Root & Celeriac Soup 

Carrot and Celeriac Soup

Great for your skin and eyesight

Serves: 6

Preparation time: 15 minutes

Cooking time: 1 hour

Ingredients

6 carrots

4 small parsley roots

1 celeriac

2 leeks

1 small onion

12 cups of water

3 cloves garlic

2 celery sticks

2 tbsp coconut oil

a dash of pepper

1 tsp Himalayan salt

1 tbsp black sesame seeds

1/4 broccoli sprouts

Instructions:

  1. Wash carrots, parsley root, and celeriac and cut into cubes.
  2. Cut leeks and onions into circles and fry in coconut oil.
  3. Add carrots, parsley root, and celeriac. Add spices.
  4. Place in a pot with water. Bring to boil. Cover and gently simmer for about 1 hour.
  5. If you wish: transfer soup to a food processor or blender while adding 1 cup of water. Blend well.
  6. Serve soup into individual dishes and sprinkle with black sesame seeds on top.
  7. Serve soup with whole grain brown rice with lentils.
  8. Enjoy!
