Lady Fingers and Chickpea Stew
Ladyfingers are the best solution for constipation. They are rich in fiber, make you feel full for longer and are packed with antioxidants, vitamins, and minerals!
Serves: 6
Preparation time: 35 minutes
Cooking time: 50 minutes
Ingredients
1 cup chickpeas
3 cups water
1 tbs coconut oil
5 small onions
2 cloves garlic
4 medium tomatoes
1 tbs freshly squeezed lemon juice
1 1/2 cups tomato juice
2 cups lady fingers (or zucchini)
1 tbs chopped oregano
Pinch of salt
pinch of black pepper
Instructions:
- Soak chickpeas in water overnight, drain.
- Toss ladyfingers in 1/2 cup vinegar and set aside for 30 minutes (to prevent it from becoming slimy)
- Heat coconut oil in the pan. Add onions (whole if they are small enough), and garlic. Fry for 5 minutes.
- Peel and chop tomatoes.
- Add tomatoes, chickpeas, lemon juice and tomato juice to pan. Cover and simmer for 30 minutes.
- Rinse ladyfingers thoroughly from vinegar.
- Add lady fingers to pan and cook for 20 more minutes (if using zucchini, cook for 10 minutes)
- Add oregano, salt, and pepper.
- Serve with whole grain brown Basmati rice.
- Serve and Enjoy!
